We love summer and the vegetable variety in our local markets.
Cooking at home can be boring, but if you are creative your summer meals can always be colourful and full of flavour.
For the evenings when you are short for time or patience try our simple, quick and easy recipe for a vegetable medley.
Prep time: 10 mins
Cook time: 30 mins
– Red Pepper
– Half of a yellow and green Zucchini
– Red and white Onion
Once you are done cutting all the vegetables, drizzle some olive oil (or whatever your preference may be) and mix the vegetables together in a bowl or directly in a casserole dish.
To add flavour we recommend adding spices, we used a mix of oregano, parsley, paprika, roasted pepper mix, salt and black pepper.
Preheat the oven to 370 degrees and cook for 30 minutes. Stir the vegetables half way into the 30 minutes to make sure it cooks evenly. If you like, at this time you can stir in some Balsamic Vinegar for added flavour and colour.
Final product is a delicious, light, and guilt free dinner that we complimented with potatoes
Our cooking tip is to use whatever you have lying around in your fridge or cupboards. Have some fun and experiment with new flavours, you never what what delicious meal you might create!
